If anyone remembers that gooey malty fruit loaf when they were younger, I do, I used to love it with butter on it! Well since becoming a vegan I’ve never really found any vegan recipe that matches up to the gooiness of the malt loaf! Well at last I’ve perfected a loaf that you can spread your favourite vegan spread onto and indulge away with a nice cup of tea. Here you go and enjoy..
130g coconut flour
130g plain white self raising flour
5 medium ripe bananas
120g pitted dates
50ml cup vegetable oil
1 1/2 teaspoons baking powder
50ml cup water
Pre heat oven to 180c.
In a mixing bowl place the flours and baking soda.
Soak the raisins in hot water for 10 minutes and drain, place to one side.
In a food processor blend the bananas, dates and oil for several minutes until smooth. Gradually add the flour mix to the banana mix until all the flour is blended. Add the water and blend. Fold in the raisins, mixing thoroughly.
Grease a 9″ square baking tray with some coconut oil. Pour in the mix, even and level with a spatula and place in the top of the oven and cook for 40-50 minutes (less for a fan oven), keep checking by using a skewer to see if the cake mix has cooked in the middle.
