I love this veg combination in soup, kale and brocolli, the kings of iron in veg! I’ve added some non-dairy creaminess in the form of coconut milk and nutritional yeast (which is B12 rich). This is a no oil recipe that’s both iron rich and packed full of B vits.
1 onion chopped
200g broccoli including stem roughly chopped
1 small courgette (zucchini)
1 teaspoon dried parsley
200ml coconut milk
1 low salt organic veg stock cube
2 tablespoons nutritional yeast
1/2 teaspoon black pepper
Put all the ingredients into a stock pan (excluding the coconut milk, avocado and nutritional yeast). Cover and bring to the boil and simmer for 10 minutes until the veg are soft. Place in the blender with the coconut milk, avocado and nutritional yeast and whizz until smooth. Top with your favourite herb, I love a little bit of fresh rosemary on mine and a sprinkling of sea salt.
