I love the sweetness of this soup with the tropical fruit mix, it really works and complements the greens of the iron and B vit rich spinach and kale. Truly yummy and super nutritious for you.
100g curly kale
100g spinach leaves
1 red onion chopped
100g mixed diced mango and pineapple
1 vegetable stock cube
1 teaspoon coconut oil
2 tablespoons nutritional yeast
Coconut milk to cover
Place all the ingredients into a stock pan, cover with the milk and cook until the onion is soft. Whizz in a blender and serve with hummus and pittas.
