I love meals that are simple to make and uber tasty, this simple salad can be made in minutes. So if you have your girlfriends coming round for lunch then this is the perfect combo. Juicy ripe pears are full of vitamin C and fibre as well as copper, iron and potassium. Leave on the skin of the pear as this is where half of it’s fibre is.
serves 2 or double the amounts below if you’re entertaining friends.
2 medium zucchini (courgettes) spiralized
1 tablespoon light tahini
1 lemon juiced
10 pitted dates chopped finely
1/2 fennel bulb chopped finely
2 ripe pears sliced with skins on
1/2 teaspoon black pepper
1 handful fresh coriander chopped
2 tablespoons of coconut nectar or date syrup
1 tablespoon balsamic vinegar

Place in a large mixing bowl and massage the tahini and lemon juice into the zucchini which will soften the zucchini slightly.
Add remaining ingredients (dates, fennel, pears, black pepper and coriander) and carefully toss together.
Meanwhile make the dressing by mixing together in a small bowl the coconut nectar or date syrup with the balsamic. Serve and drizzle over the dressing. Eat immediately!
