Quinoa and Date Porridge
I love experimenting with food and most of my recipes come from my sense of curiosity, my intuition and a taste for something that evolves into a tasty dish.. So…when I discovered quinoa porridge, it was ‘oh my word! is this for real, quinoa for breakfast?’
It works though, by adding medjool dates, raisins, apricots or any dried fruit whilst you’re cooking this wonderful little seed (yes it’s a seed, not a grain as most people think), you give the porridge a very naturally sweet taste, so no need to add any yucky sugar.
I like to top my porridge with chopped banana too, or you can add apple, use apple juice instead of almond milk or why not mix some apple juice to your almond milk, just go with your intuition. Try it, it’s very very tasty. ps. you can buy quinoa in any good health food shop.
2 cups red or white quinoa washed
1/2 cup chopped medjool dates
3 tablespoons dessicated coconut
Place quinoa, dates and coconut in a pan, cover with water, bring to the boil and simmer for 15 minutes until quinoa has spirited. Drain and set aside for 5 minutes to enable the quinoa to fluff up. Serve with almond milk.
