This is a highly nutritious salad with plenty of flavour which will really pick you up if you’re feeling sluggish and in need of some freshness. This recipe has a zesty dressing too.
Serves 2 people
Large salad bowl
3 cups of spiralled pasta
3 tablespoons of vegan pesto ( you can get this from a good health food shop or online, I get Zest vegan basil Pesto)
6 large handfuls baby spinach leaves
3 fresh vine tomatoes roughly chopped
8 radishes sliced
1/2 avocado chopped
2 sticks celery halved lengthways then sliced
1 handful freshly chopped coriander
1 handful freshly chopped parsley
1 handful freshly chopped basil
1 tablespoon capers
6 sun dried tomatoes (the ones in olive oil are best)
1 clementine juiced
Dash of lemon juice
2 tablespoons balsamic vinegar
1 tablespoon date syrup
Salt and pepper
Cook the pasta with a little olive oil in the water so the pasta doesn’t stick, drain and add the pesto stirring and coating the pasta thoroughly, set aside to cool.
Add all the salad ingredients in a large bowl. Add the cooled pasta and serve. Enjoy!
