Deliciously buttery in a non-dairy way! Totally vegan and totally yummy, kids love these as a treat and I’ve added some chia seeds too!
200g vegan non-dairy butter
2 tablespoons vanilla essence
100g soft brown sugar
300g plain flour
3 tablespoons chia seeds
Pre-heat oven to 180c. Cream the butter, sugar and vanilla together in a large bowl using a electric whisk. Add the flour and the chia seeds and mix until a dough is formed. Remove from the bowl and kneed into a large ball, place in cling film and pop into the fridge for half an hour to firm up.
Then roll out the dough to about 1/2 inch thickness and use your favourite cookie cutter to make shapes – I’ve used bunnies and chicks! Place the cookies onto a greased baking tray and cook for 10-15 minutes, keep checking them as they brown quite quickly. Remove and cool and enjoy!
