Gogi berries are power packed little gems, I think they kind of look like ruby jewels when they’re arranged in a salad with a dressing poured on them, I even use them in my raw chocolate recipes too and munch on them as a snack. So it’s not a surprise that they are high in antioxidants, they boost your immune system, and improve your brain function. This little ruby berry is full of nutrients, is rich in iron, is both a good source of vitamin A and vitamin C and looks fab in any salad adding that extra nutritional boost.
1 large zucchini (courgette) spiralized
2 spring onions finely chopped
1/2 medium ripe avocado
1 clove garlic finely chopped
1 handful of fresh flat leaf parsley finely chopped
1 handful dried gogi berries
2 tablespoons coconut flakes
1 tablespoon coconut nectar
2 tablespoons olive oil
1/2 lemon juiced
black pepper to taste
himalayan pink salt to taste
Spiralize the zucchini and place in a large mixing bowl, add the olive oil and lemon and massage into the zucchini, this will soften it.
Spoon out the flesh of the avocado and mash it with your hands into the bowl of zucchini. Add the spring onions, garlic, parsley, gogi berries, coconut flakes and mix with your hands. Add salt and pepper to taste and drizzle with coconut nectar and mix it up again!
